My Go-To Super Quick Smoothie Bowl

I’m such a fan of smoothies, the best wedding present we received was a Nutribullet, I love that I get a fruit and veg shot before 8am, however, I do find that when I have a smoothie for breakfast I don’t stop, I don’t take time to digest and I keep on working while I sip, which is why I’ve become a little obsessed with making a smoothie bowl, just like a smoothie but with its added toppings it just feels more like a complete meal, and I actually have to slow down to enjoy.

While I still wanted to slow down and enjoy the calm of breakfast before starting my day, I also needed to find a foolproof super quick recipe and I think I’ve found it – presenting my Berry Coconut Blast Smoothie Bowl  where all you need is four core ingredients, banana, mixed berries, yoghurt and coconut milk, and then you can go wild with extra toppings such as fresh blueberries, pomegranate seeds, coconut flakes, chia seeds and nuts, basically there are no rules, you add on what you want to eat, or simply what you have in the house.

Smoothie Bowl tips

There are just a few things to keep in mind, you want your smoothie bowl to be thicker than a normal smoothie:

  • Think thickening ingredients, I like to use organic natural yoghurt or greek yoghurt, as well as fruit like banana or avocado
  • Then you need liquid, I like coconut water, but you could use almond milk or even fruit juice
  • More fruit, I like to use frozen mixed berries, as well as apple, pear and pineapple
  • If I’m doing a fruit and veggie smoothie bowl I like to go for leafy greens like kale or spinach

All in the blending

The best way to create an ultimate smoothie bowl is in the blending, I generally like to do mine in batches to make sure it stays thick, as you don’t want your smoothie bowl to be runny, but you still want it all blended. So, my approach is to add half the mix, blend, and then slowly add the rest of the ingredients until it is just right.

Have fun with the toppings

Then the fun bit – the toppings, which in my opinion makes the smoothie bowl more of a complete meal over a regular smoothie. Toppings I love to add:

  • Fresh fruit – blueberries, pomegranate seeds, kiwi fruit
  • Coconut flakes, nuts, seeds, granola muesli or cornflakes, and even dark chocolate chips
